Italian Sausage Soup

Cooking spray or olive oil (1 tsp.)
1 lb. Italian link sausage, cut into 3/4" slices
1 large Onion, diced
2 cloves garlic (or more to taste) minced
1 (15 to 16 oz.) can cannellini beans, drained
1 (10 oz.) box frozen green beans
2 (10 1/2 oz.) cans chicken stock (low fat is fine)
1 (28 oz.) Can Italian plum tomatoes with liquid - chop the tomatoes roughly
1 (10 oz.) Box frozen chopped spinach
Kosher salt and freshly ground black pepper


Heat heavy stockpot to medium and coat with olive oil or cooking spray and add sausage to pan. Cook, turning often, until sausage is brownned. When sausage is browned, remove to paper towels and drain all but 1 Tbsp. fat from pan.

Add onion to pan and saute until translucent. Add garlic and saute for 1 minute. (Do not allow garlic to brown or burn.) Add remaining ingredients.

Return reserved sausage to soup, along with enough water to make soup the consistency you like.

Season to taste with salt and pepper
