Swedish Pea Soup
1 lb. yellow dried peas
warm water
1 ham bone with some meat or smoked pork hocks
1 large grated carrot
3 ribs of celery, cut up
1 medium onion, chopped
season to taste
Soak peas in warm water for 1 hour. Add water to make 3 quarts and the ham bone. Simmer until peas are soft.
If whole peas are used, skim the shells off as they rise.
Add the vegetables and cook until tender. Season to taste - add water if needed.
Serves 8 to 10 people.
