Yellow Split Pea Soup

Yellow Split Pea Soup

1 pound dried yellow split peas
2 quarts water
2 tsp. dried thyme
2 leeks, chopped
2 stalks celery, chopped
salt and pepper to taste


Soak the split peas in water overnight; rince and drain.

Place the peas in 2 quarts of fresh water, add remaining ingredients and simmer until tender, Stirring occasionally.

Puree the soup in a food processor until smooth. Add salt and pepper to taste.
