Tomato Bisque 

Source: "Cookbooks Unlimited" Joyce's Personalized Cookbook. 
 

2 Tbl. butter 
3/4 cup chopped onions 
1 large baking potato (1-1/2 cups), peeled and diced 
3-1/2 cups chicken broth 
1 tsp. sugar 
1 tsp. dried basil 
4 Tbl. tomato paste 
1 bay leaf 
1/4 tsp. pepper 
1 (28-ounce) can whole tomatoes with juice 
sour cream 
chopped parsley 

Melt butter in 3-quart saucepan, add onion and sauté for 5 minutes over 
medium heat, stirring occasionally. 

Add potato, bouillon cubes, water, bay leaf and pepper.  Cover and simmer 5 minutes.

Add tomatoes with juice, tomato paste, and sugar to saucepan with potatoes; stir well. Cover and simmer 20 minutes.

Remove bay leaf and puree in batches until smooth.

Serve with sour cream and parsley.

Makes 6 to 8 servings.
