Tomato Bisque

1-1/2 pounds ripe tomatoes (5 or 6)
4 tablespoons butter
1 cup chopped onions
1 cup cucumber, peeled, seeded, and diced
1/2 bay leaf
1/4 cup flour
3 cups milk (may be part half-and-half for a richer soup)
1 teaspoon salt
Freshly ground pepper to taste


Peel, core and chop the tomatoes.

Melt the butter in a saucepan and cook the onions until wilted. Add the tomatoes, cucumber, and bay leaf.

Stir in the flour and mix well. Simmer until the tomatoes are very soft, stirring occasionally.

Puree the tomato mixture in a food processor and return to the saucepan.

Heat the milk/half-and-half and add to the tomatoes, stirring vigorously until the soup thickens and is smooth.

Season with salt and pepper.
