Tortilla Soup

1 chicken
bay leaf
3 to 4 chicken bouillon cubes
1 onion, chopped
2 to 3 carrots, peeled and sliced thin
2 stalks celery, sliced
1 (16 oz.) jar any mild salsa
1/2 tsp. garlic powder
2 fresh limes
1 bag tortilla chips (plain)


Boil whole chicken with one bay leaf in 3 quarts of water. When meat is done, remove and cool.

Add bouillon, chopped onion, carrots and celery and bring to boil. Simmer until vegetables are tender.

Shred white meat of chicken with hands and add to soup. Add salsa and garlic powder.

Take and squeeze the juice of 1 lime into soup; taste. Add more lime juice until it has just the right taste for you. Salt and pepper to taste.

Serve this soup over tortilla chips in a bowl.

Serves 4 to 6.
