Vegetable: Summer Garden Soup

Summer Garden Soup

8 c. water
1 Tbsp. salt
1 1/2 lb. zucchini or summer squash, sliced 1/2-inch thick
1 lb. green beans, cut in
1-inch pieces
1 (15 oz.) can navy or fava beans
1 c. small elbow macaroni


Bring water to boil. Add all ingredients except macaroni. Simmer 10 minutes. Add macaroni, return to boil, simmer another 12 minutes (option - give the green beans an extra 5 minutes before adding other ingredients so they won't be so crisp). Serve with Summer Piston.


Summer Piston:
1 1/2 tsp. garlic, finely chopped
1 tsp. coarse salt
1/2 c. fresh basil leaves, chopped
2 Tbsp. oil
4 tomatoes, peeled and coarsely chopped


Crush garlic and salt together with flat of knife until it makes a paste. Combine with other Summer Piston ingredients and mash to make a puree. Chill. Spoon over hot soup.
