Wanda's Black-Eyed Peas Mexicana

1 pound bulk pork sausage
1 medium onion -- chopped
1 clove garlic -- minced
2 cans black-eyed peas* (16-oz.each) -- drained
1 can tomatoes (16-oz.)
1/4 cup water (or liquid from peas*)
1 teaspoon chili powder
1/4 teaspoon black pepper
Crumble sausage in a skillet and cook until done; drain well. Stir in onion and garlic and saute 3-5 minutes. Stir in remaining ingredients; simmer mixture for about 1 hour. Stir occasionally.
NOTES : * You can also use 1 (16-oz.) bag frozen OR cooked dried black-eyed peas. Use the cooking liquid from either to substitute the 1/4 cup water called for, if desired.
