Empanadas

1 tablespoon olive or vegetable oil
1 medium onion chopped
2 jalapeno peppers, seeded & chopped
3/4 pound lean ground beef
1 tablespoon chili powder
1 cup salsa
1 (10 ounce) box frozen peas, carrots,corn thawed
2 refrigerated piecrusts (15 ounce) for 9 inch pie
1/2 cup shredded pepper Jack cheese
1 egg


Preheat oven to 400 degrees F. Lightly grease a baking sheet.

Saute onion in oil in large nonstick skillet over medium heat until soft, 4 to 6 minutes. Add jalapeno peppers and cook 1 minute. Stir in beef and cook, stirring to break into small pieces, until browned. Stir in chili powder; cook 1 minute.

Add salsa, 1/2 cup water and vegetables; cook 3 minutes. Remove from heat.

Unfold dough and cut each crust in half. Make 3 small cuts in one half of each piece of pastry.

Spread a quarter of the cheese and a quarter of the meat mixture on the uncut side of each.

Lightly beat egg with 2 tablespoons water. Brush edges of pastry with egg; then fold pastry over filling; press to seal edges. Brush egg mixture over top of empanadas.

Place on lightly greased baking sheet and bake 20 minutes or until lightly brown.

Makes 4 servings.
