Southwest Meatloaf with Green Sauce

1 1/2 pounds lean ground beef
1 cup enchilada sauce
1 cup crushed baked tortilla chips
1 small onion, minced (about 1/2 cup)
2 cloves garlic, minced
1/2 envelope taco seasoning mix (about 2 tbl.)
1 teaspoon salt
1 teaspoon ground cumin
1/3 cup chopped fresh cilantro
1 egg

Green Sauce:
1 pound tomatillos, husked and rinsed
3 cloves garlic
1 large jalapeno, or to taste
1 ripe avocado
3/4 cup loosely packed fresh cilantro
1 teaspoon salt
2 tablespoons fresh lime juice


Preheat oven to 375° F.

Combine all meatloaf ingredients. Pack into a loaf or form on baking sheet and bake for about 1 hour, or until done.

For Green Sauce: In a medium saucepan, cover tomatillos, jalapeno and
garlic cloves with water and bring to a boil. Reduce heat and simmer for 10 minutes. Drain and cool.

Place cooked ingredients and remaining ingredients into a blender or food processor and puree until smooth.

Cover and chill until ready to serve.

Serve meatloaf slices with a dollop of sauce on top.
