Caldo Verde (Green Soup) 

2 1/2 qt. water 
4 Tbl. olive oil 
4 potatoes, peeled and diced 
2 tsp. salt 
1/2 tsp. pepper 
2 lbs. kale or 
1 lb. spinach and 1 lb. cabbage 


Combine the water, olive oil and potatoes in a saucepan.  Cook over medium  heat for 30 minutes. 

Force the potatoes through a sieve or mash them as  fine as possible. Return them to the liquid in the pan.  Add salt and pepper and cook on low heat for 1 hour.

Wash greens to be used and remove all tough fibers. Shred finely and drain well.

Add to potato mixture and cook over medium heat for 15 minutes, stirring occasionally.

Serve hot or cold.
