Beef and Bean Enchiladas

1 1/2 lbs. ground beef
1 large onion, chopped
1 large can refried beans
1 tsp. salt
1/8 tsp. garlic powder
1/2 cup bottled taco sauce
1 cup quartered pitted black olives
1 dozen corn tortillas
salad oil for frying tortillas
3 (10 oz.) cans enchilada sauce
3 cups shredded cheddar cheese
Sour cream and salsa for garnishing


Preheat oven to 350 degrees F.

Brown beef and onions. Stir in beans, salt, garlic, taco sauce and olives; heat til bubbly. Turn heat to low.

Dip tortillas one at a time in hot oil to soften; drain.

Heat enchilada sauce. Pour half into an ungreased 3 qt. baking dish.

Fill each enchilada and roll. Place flapside down in dish. If there is any meat mixture remaining mix into remaining enchilada sauce and pour over enchiladas.

Cover with cheese and bake uncovered 15-20 minutes at 350 degrees.

Garnish with sour cream and salsa.
