Chicken-Chipotle Enchiladas

3 chicken breasts
2 cans of OLD EL PASO mild enchilada sauce
10 corn tortillas
refried beans
white rice
14 oz can of artichoke hearts
4.5 oz can of chopped green chiles
1 T chipolte peppers
4-6 oz "light" sour cream
Cheddar cheese


Sprinkle the chicken breasts with garlic powder, salt and pepper then put them in the broiler.

In the meantime, saute garlic and onion in a skillet with some oil.

When the chicken was done, shred it up and put it in the pan with the onion and garlic. Then put in about a tablespoon or so of chipotle; add about 1 tablespoon sour cream.


Get a lasagna pan and put a little sauce on the bottom. Then just tear up the tortillas and dipped them in some sauce and put them down. Cover them with the chicken, refried beans, rice, artichokes, chiles, sour cream, cheese, more sauce and then layered again. Topped with cheese. Baked at 350 for about 30min or so and then put into the broiler to brown on top. Served with beans.
