Enchiladas

1/2 c. melted shortening or oil
10 corn tortillas
1 lb. Longhorn style cheese -- grated
1 small onion, grated
1 can enchilada sauce (Gebhardt brand)


Heat shortening or oil in small skillet until hot. With tongs, dip corn tortillas in shortening or oil to soften.
Place on a cookie sheet.

Top each tortilla with grated cheese and onion and roll tortilla around it. Place rolled tortilla in a 9-inch cake pan. Cover tortillas with enchilada sauce and remaining grated cheese and onions.

Bake in a hot 425 degrees oven for 10 minutes or until cheese is melted. Serve with Spanish rice and beans.

Serves 4.
