Salsa: Beans Black and White Bean Salsa

Black and White Bean Salsa

3 TBSP. Corn oil
1 1/4 cups fresh corn kernels, or frozen (thawed)
1 (16 oz.) can black beans, lightly drained
1 (15 oz.) Can Great Northern white beans, lightly drained
1 cup chopped red bell pepper
3/4 cup chopped red onion
2 TBSP. fresh lime (or more to taste)
3 large garlic clove, pressed
1 large jalapeno pepper, seeded and minced
1 TBSP. fresh oregano or 1 tsp. dried
1 TBSP. chilli powder
1 1/2 tsp. ground cumin (or more, to taste)


Heat 1 tablespoon oil in skillet over high heat. Add corn and saute until browned. Transfer to large bowl. Add 2 TBSP. oil and remaining ingredients. Season generously with salt and pepper. Cover and refrigerate. Serve with tortilla chips, or use as vegetarian, filling for burritos.

NOTE: Can be made 2 days ahead.
