Southwestern Brown Rice

Southwestern Brown Rice 

2 tablespoons vegetable oil 
1/2 cup chopped onion 
1 clove garlic, minced 
1 cup uncooked Riceland Natural Brown Rice 
2 cups chicken broth 
1 (12 oz.) can whole kernel corn, drained 
1 (4 oz.) can chopped green chilies, drained 
1 large tomato, chopped 
2 tablespoons chopped fresh parsley 
1/2 teaspoon chili powder 
1/4 teaspoon dried oregano leaves 


Heat oil in large skillet.   Add onion and garlic.  Cook and stir 5 minutes.   Stir in rice.   Cook and stir 2 to 3 minutes. 

Stir in chicken broth.   Bring to a boil; reduce heat.  Cover; simmer 40 to 45 minutes or until rice is tender and liquid is absorbed.

Stir in remaining ingredients.

Serves 6.
