Tamale Dough

2 cups lard
6 cups fresh masa
3 teaspoons salt
warm chicken or meat broth


Beat lard until very fluffy.

Beat in masa about 1/4 cup at a time. If it starts to get stiff, dribble in a little warm stock. Keep adding masa till all masa is used. It should be about consistency of a soft cookie dough or a stiff cake batter. Drop a dab into cold water. It should float.
