Southwestern Stuffed Baked Potatoes

4 large baking potatoes, scrubbed
2 Tblsp. oil
2 cups chopped onions
2 cups Monterey Jack cheese, with Jalapeno, shredded
1/2 cup plus 2 Tblsp. sour cream
8 strips bacon, cooked and crumbled
Salt to taste


Pierce potatoes once with a fork and cook on high in microwave about 10 minutes or until done. Or wrap in aluminum foil and bake in conventional oven at 350 degrees F for about 1 hour or until done.

Heat oil in heavy skillet over medium heat, add onion and saute' until tender and set aside.

When potatoes are cool enough to handle, cut them in half lengthwise. Scoop out all but a thin layer of flesh from each half, reserve potato shells. Place the scooped out flesh in a bowl and mash with a potato masher. Stir in sauteed onion, the cheese, sour cream, bacon and salt. Mound potato mixture in reserved shells.

To reheat bake uncovered in a conventional oven at 350 degrees F for 15 minutes or the microwave on high for 2 to 3 minutes. Serves 8.
