Yugoslavian Stew

2 medium onions, diced
1 green pepper, diced
2 Tbsp. olive oil or lard
1 cup uncooked rice
3 large potatoes, diced
3 large tomatoes, sliced, divided
1 tsp. salt
1 lb. uncooked pork and veal,mixed and cut into bite-size pieces
1/4 tsp. pepper
2 cups beef stock or bouillon
dash of paprika


Preheat oven to 325 degrees F. Grease a large casserole.

Cook onions and peppers in hot oil or lard. Brown separately, rice, potatoes and meat.

In casserole dish, add onions, pepper, half the tomatoes, potatoes, rice, then the remaining tomatoes and finally the meat. Sprinkle salt and pepper between layers. Pour in beef stock; cover.

Bake for 1-1/2 hours, until liquid is absorbed and vegetables are tender.

Sprinkle with paprika.
