Stuffed Artichokes

6 artichokes
2 Cups Italian Parsley -- Coarsely Chopped
1 Heaping Tsp. freshly ground pepper
2 Cups Unseasoned Bread Crumbs
3 Cups Romano Cheese -- grated
3 Cloves Garlic -- Minced
2 Cup Oil


Turn the artichoke on its side. Holding the artichoke firmly by its leaves, slice the stem off the bottom with a serrated knife, being careful not to cut into the leaves. Then slice about an inch off the top of each artichoke. Using a scissors, t5rim the tips off all the artichoke leaves.

In a large pot, bring 8 qts. water to a boil and drop in the artichokes. Cover tightly and boil on high heat for 30-35 minutes until the artichokes are semi-tender and have lost their green color. Meanwhile mix the ingredients for the stuffing.

Combine parsley, black pepper, bread crumbs, Romano and garlic in a bowl. Mix well.

When the artichokes are cooked, place them upside down too drain and cool slightly, then open the leaves. Starting from the outside leaves and working to the center, sprinkle in the stuffing.

Place each stuffed artichoke upright in a baking pan. Drizzle 1/2 cup oil over each artichoke so the oil seeps into the stuffing.

Bake in 400 oven for 30-40 minutes until they are slightly browned on top.
