Stir-Fried Asparagus

1 bunch asparagus, tough ends snapped off and sliced on the diagonal
2 scallions, trimmed and sliced on the diagonal
2 - 3 T vegetable oil (more or less as needed)
1/4 - 1/2 t salt to taste
pinch sugar
3 - 4 T sliced or slivered toasted almonds


Parboil the asparagus for 2 minutes. Rinse under cold running water to stop cooking process. Drain well. (Can be done an hour or two ahead of time).

When ready to serve, heat a wok or skillet very hot; carefully pour in a little oil followed by the scallions. Stir until they start to sizzle. Add asparagus; stir fry until heated through. Add more oil if the surface of the wok looks dry. Stir in salt & sugar. Serve immediately on a heated platter sprinkled with the toasted almonds.
