Avocado: Avocado Salsa by 100Pamela

Avocado Salsa (serve with tortilla chips)
Makes 4 cups or about 32 servings

1 (16 oz) package of frozen corn kernels, thawed
2 (2.25 oz) cans sliced ripe olives, drained
1 med. red bell pepper, chopped smallish
1 small red onion, chopped fine
5 cloves garlic, minced
1/3 cup olive oil
1/4 cup fresh lemon juice
3 tbl. cider vinegar
1 tsp. dried oregano
1/2 tsp. salt
1/2 tsp ground black pepper
Just before serving, stir in
3-4 diced avocados


In a large bowl, mix first four ingredients

In a small bowl mix the rest well except avocado and chill in fridge for at least 8 hours or overnight.

Just before serving, stir in avocado
