Beets-Pickled
2 lb beets (without tops)
1 med onion
1-1/2 t dry mustard
1 t salt
1-1/4 c sugar
1-1/2 c cider vinegar
1 c water
Trim tops within 1 inch of beet; do not trim root end. Simmer in a large pot of water until tender, 35 to 40 minutes. Drain, cool and peel. Halve if large and slice 1/4 inch thick. Quarter onion, slice thinly and toss with beets.
Combine mustard, salt and sugar. Stir in vinegar and water. Bring just to a boil. Pour over beets and onions. Cover and chill overnight to several weeks. Use a slotted spoon to serve.
