Broccoli: Broccoli Bisque

Broccoli Bisque

3 tablespoons finely diced onions
3 garlic cloves, finely diced
3 cup Chicken stock
2 cups broccoli stems, peeled, lightly steamed
2/3 cup non-fat milk powder
1/2 cup skim buttermilk
1 1/2 tablespoons fresh dill
1 tablespoon fresh lemon juice
1 tablespoon low-sodium soy sauce
1 tablespoon dry sherry
2 tablespoons cornstarch mixes with 4 tablespoons water
3/4 cup broccoli flowerets, lightly steamed, chopped


Saute onion and garlic in pan sprayed with No Stick cooking spray plus 2 tablespoons stock. Put remaining ingredients except cornstarch mixture and broccoli flowerets in a food processor fitted with the metal blade and puree.

Return to pan, add cornstarch mixture and cook over low heat. Add broccoli flowerets, heat and serve.
Variations: Add tofu cubes or pita bread croutons

Makes 5 servings of 86 calories per serving; 8 grams protein; trace of fat; 142 mg. sodium; 2 mg. cholesterol.
