Broccoli: Fried Broccoli

Fried Broccoli

2 heads of broccoli
Pepper
1/4 cup bacon oil
1/4 cup water
1 TBS garlic salt
8 cloves chopped garlic

Take two heads of broccoli and cut off the flowerettes with individual stems attached. Cut off any small leaves. Discard the tough stalk. Wash in a colander and sprinkle with pepper.

Heat up the largest covered pan or electric skillet you have and add 1/4 cup bacon oil and 1/4 cup water for steaming the broccoli. Heat oil and water to medium temperature. The broccoli must cook slowly or it will burn.

Add 8 cloves chopped garlic to the oil and fill the pan or electric skillet with the broccoli. Sprinkle with 1 tablespoon of garlic salt and toss.

Cover and let steam for about 20 minutes stirring occasionally to prevent burning or sticking and adjust heat to lower if it tries to burn. Broccoli is done when it is slightly wilted and tender. Makes a great side dish with any meat.
