Broccoli Pie
1 Baked 9" pastry shell
1 1/2 cup Swiss cheese, shredded
2/3 cup Parmesan cheese
1/2 cup dry bread crumbs
1 1/2 to 2 pounds chopped broccoli
4 tablespoons butter or margarine
1/2 cup chopped parsley
1 1/2 cups half and half
4 eggs
3/4 teaspoon salt
1/2 teaspoon pepper
Preheat oven to 400° F.
Saute broccoli in butter until tender.
Grate Swiss cheese.
Place broccoli in pastry shell. Sprinkle parsley over broccoli.
In a bowl, mix eggs, half & half, salt & pepper; add Swiss cheese, blend well.
Pour over broccoli.
Sprinkle top with Parmesan and bread crumbs.
Bake at 400 degrees for 40-50 minutes.
Let stand 10 minutes before serving.
