Pignoli Broccoli Pasta

1 head of broccoli, trimmed
1 lb. penne pasta, cooked and drained
1 red bell pepper, seeded and diced
1/2 cup orange juice
1/4 cup red wine vinegar
2 tbsp. olive oil
1/4 cup pine nuts, toasted


Cut broccoli into florets and the stems into 1/2 inch disks. Place in a steamer basket, then place that inside a large saucepan with 1 inch of water. Cover and bring to a boil. Check the broccoli after about 4 minutes - the fork should easily pierce the stalk. Remove from heat.

Toss with the cooked pasta, broccoli and red pepper.

Whisk together orange juice, vinegar and olive oil. Pour over pasta mixture. Garnish with nuts, if desired.

4 servings.
