Broccoli Stuffed Tomatoes

  Broccoli Stuffed Tomatoes 

  6 medium tomatoes 
  salt, pepper, sugar
  1 (10 oz.) package frozen broccoli 
  1 cup shredded Swiss cheese 
  1 cup soft bread crumbs 
  1/2 cup mayonnaise 
  2 Tablespoons chopped onion 
  2 Tablespoons Parmesan cheese


Preheat oven to 350 degrees.

Cut tops from tomatoes, scoup out pulp (reserve for another use.  Sprinkle inside with salt, pepper and sugar.  Invert on wire rack to drain for 30 minutes. 

Steam broccoli (without salt); drain well.  Mix broccoli with Swiss cheese, bread crumbs, mayonnaise, and onion; stuff tomatoes.  Sprinkle with Parmesan cheese.

Bake 30 minutes at 350 degrees.
