Pineapple Chunk Cole Slaw

1 can (4 1/2 oz.) pineapple chunks
1/2 c. mayonnaise
1 tsp. grated onion
2 tsp. prepared mustard
1/2 tsp. salt
dash of cayenne pepper
1 qt. shredded cabbage


Drain pineapple chunks, reserving 1/4 cup syrup. Chill pineapple.

Combine mayonnaise, pineapple syrup, grated onion, mustard, salt and cayenne pepper. Mix well.
Add to chilled pineapple chunks and cabbage. Toss lightly. If desired, serve in outer cabbage leaves or on salad greens. Serves 6.



Cole Slaw

3 c. shredded cabbage
1 c. pineapple tidbits, drained
1 c. diced apples
1 c. miniature marshmallows
1/2 c. diced celery
1/2 c. salad dressing
pineapple slices
maraschino cherries


Mix cabbage, pineapple tidbits, apples, marshmallows and celery. Toss with salad dressing. Garnish with the pineapple slices and cherries.



Carrot and Pineapple King Cole Slaw

2 c. coarsely shredded cabbage
1 c. coarsely shredded carrots
1 can well-drained pineapple chunks
1/3 c. toasted, slivered almonds

Dressing:
2/3 c. mayonnaise
1 tsp. grated onion
1 tsp. sugar
2/3 c. sour cream
1 tsp. lemon juice
pinch of salt


Blend together dressing ingredients.

Combine cabbage, carrots, pineapple and almonds in a large bowl. Add dressing and toss well. Chill at least 1 hour. Makes 6 servings.



Heavenly Cole Slaw

3 medium carrots, grated
1/2 head cabbage (large), grated
1/2 green pepper, chopped
1 c. miniature marshmallows
1 small can chunk pineapple, drain and save juice

Dressing:
Pineapple juice
3/4 c. mayonnaise
dash of salt and pepper
1 1/2 tsp. sugar


Grate together in a large bowl: carrots, cabbage and add the green pepper. Add the marshmallows and pineapple, that you drain and keep juice. Mix altogether.

Mix pineapple juice, mayonnaise, salt, pepper and sugar. Blend all together. Pour over cabbage mixture and blend well. Chill for 30 minutes.
