Braised Red Cabbage

1 Red Cabbage, cored, quartered
1 Tbl. Butter
1 Apple, peeled, cored, chopped
1 Onion, chopped
2 slice Bacon, chopped
1 clove Garlic, chopped
1/2 cup Red wine vinegar
1 cup Honey
1/2 tsp. Salt
1/2 tsp. Freshly ground black pepper
12 Potato, peeled and finely grated


Shred cabbage through a food processor with the fine metal blade.

Heat butter in a large saute pan over med-high heat; stir in apple, onion, bacon and garlic. Cook until onion is translucent, about 6 min.

Stir in cabbage, vinegar, honey, salt and pepper; simmer, stirring frequently, for 20 min. or so.

Stir in the potatoes and cook until all of the liquid has been absorbed, about 5 min.
