Candied Jalapenos

1/2 gallon sliced jalapenos (purchased in jar)
4 cups sugar
1/2 cup Karo syrup (white)
1 cup pepper juice (reserve)


Drain juice off of peppers for about about 20 minutes, reserving 1 cup of the juice. Discard the rest.

In large pan (it tends to foam a lot), add sugar, juice and karo syrup. Bring to a boil over medium heat. Boil until it forms a medium hard ball in a cup of cold water. This takes about 45 minutes to an hour.

Remove from heat and let cool about 5 minutes.

Slowly pour over peppers in the jar. Replace lid on jar and turn jar up side down on counter top.

After the peppers have cooled, wash the sticky mess off the jar. Then refrigerate after it has completely cooled.

Ready to eat after 2 or 3 days.

Note: Serve with fritos and cream cheese. Also good on hamburgers.

The way to drain the peppers is to place a colander over the mouth of the jar, then put larger bowl on top of colander and turn upside down and only drain for 20 min (you don't want peppers real dry).

Also while the peppers are cooling (takes about 2 to 3 hours) keep turning the jar over every now and then.
