Mom’s Mustard Carrots
However many carrots you need for dinner, sliced nicely, not into rounds. Maybe into sticks.
1/4 cup butter
2 tbl. prepared mustard
1 tsp. tarragon or oregano
Steam or boil the carrots until they are mostly cooked. Even do them in the microwave for a while on high. Don't do crunchy, maybe mildly crunchy.
Meanwhile in a bowl or saucepan if doing it on the stove, melt butter with mustard. Add to this, just to simmer, whatever herb you choose. Let the herb mellow in the butter.
Drain the carrots and mix with the mustard/herb butter. Toss well.
