Orange Glazed Carrots - microwave
6 med. Carrots, peeled and thinly sliced
3 Tb. Dark brown sugar, firmly packed
3 Tb. Butter or margarine
3 Tb. Orange juice
1 tea Lemon peel
1/4 tea Salt
Combine all ingredients in a deep, 1-quart, heat-resistant, non-metallic casserole. Heat, covered, in Microwave Oven 6 to 8 minutes or until carrots are tender. Stir occasionally so that carrots are well glazed.
