Sweet Baby Carrots

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 pound baby carrots
2 cups water
Nutmeg


In medium saucepan, melt butter over medium-low heat and add the sugars, stirring until dissolved. Add the carrots and pour enough water over them to just cover them. Cook the carrots, covered, until they are almost tender; remove them from the pan. Continue cooking the liquid for 5-7 minutes, until it reduces to a nice glaze. Add a tiny pinch of nutmeg.

Return carrots to glaze and cook together for 2-3 minutes more. Serve immediately.

Serves 4
