Cauliflower and Cheese Soup

1 kilo cauliflower or 1/2 kilo cauliflower, 1/2 kilo broccoli
1 carrot
1/6 cup potato flakes without milk
200 g tub spreadable cheese (9% fat) with herbs
1 litre water
1 vegetable stock cube
basil, thyme, oregano
salt & pepper


Cut cauliflower (+ broccoli) into florets, peel and slice carrot. Put them into a large pan with the water and the vegetable cube. Add herbs. Bring into boil and let simmer until soft, about 15 minutes.

Pureé the vegetables and add the cheese. Let simmer until the cheese has dissolved into the soup. Take the pan off the boil, add the potato flakes, mix and let stand for a minute. Serve the soup with fresh bread.
