Cheesy Scalloped Spuds
1/2 Cup Chopped Onion
1/4 Cup marg. or butter
1/4 Cup flour
1 tsp. dry mustard
1/2 tsp. pepper (and some salt)
2 Cup chicken stock (homemade is best)
2 Cup (or less) shredded cheddar, divided
4 1/2 Cups thinly sliced potatoes
Preheat oven to 325 degrees F.
Grease a casserole dish.
Cook onions in butter. Add flour, mustard, salt and pepper, cook for 3 minutes to cook flour.
Gradually add stock. Cook until thick, add 1 1/2 cups cheese. Pour over sliced spuds and mix well.
Put all into a casserole dish. Bake 1 1/4 hours at 325. Test with knife for tenderness.
Sprinkle remaining cheese over and bake for the final 15 minutes.
