Apple Roasted Corn Salsa
(better if made the night before)
2 medium granny smith apples, diced
2 cups roasted corn ( you can use frozen and saute in olive oil and salt and pepper - toss until golden brown)
1/2 med onion. finely chopped
1/2 TBSP. chopped garlic
1/4 cup diced red pepper
1/2 cup chopped tomato
1/2 tsp. cumin
1/2 tsp. chili powder
1 TBSP. chopped cilantro
1/4 tsp. cayenne powder
Salt and Pepper to taste
Pinch of sugar
1/2 oz of each: olive oil, lemon juice and lime juice
Mix and refrigerate.
