Carmen’s Incredible Creamed Corn
16 oz. pkg. frozen whole kernel corn
6 Tbl. butter
1/2 cup milk
1-2 Tbl. flour
1/2 tsp. salt
2 Tbl. sugar
1/2 cup whipping cream
Cook butter and corn (and just a dab of water) on low heat. Simmer 15-20 minutes.
In separate bowl, make a roux with the milk, flour, salt and sugar, using a whisk to mix. Add the roux to the corn/butter mixture and simmer until just thickened. Turn off heat. Add the whipping cream just before serving.
