Cracker Barrel Hash Brown Potato Casserole
2 cups shredded American or cheddar cheese
1 (10 1/2 oz.) can cream of chicken soup
1 cup sour cream
1 cup finely chopped onion (optional)
1/4 cup butter, melted
1/4 tsp. salt
1/4 tsp. pepper
1 (32 oz.) pkg. frozen loose-pack hash brown potatoes, thawed
1 cup corn flakes, crushed
1 Tbl. butter, melted
Preheat oven to 350 degrees F.
Grease a 9x13" baking dish.
In a large mixing bowl, combine the shredded cheese, soup, sour cream, chopped onion, 1/4 cup butter, salt and pepper; mix well.
Fold in the thawed hash brown potatoes.
Turn mixture into prepared pan.
Toss together the cornflakes and 1 Tbl. melted butter; sprinkle over potato mixture.
Bake for about 1 hour or until casserole is golden brown and potatoes are tender.
