Creamed Potatoes

1/2 cup butter
1/2 cup flour
3 3/4 cups milk
3/4 cups dry sherry
1 1/2 teaspoon salt
1 tablespoon Angostura Bitters
6 cups cubed cooked potatoes
8 ounces creamed cheese


Preheat oven to 350 degrees F.

Melt the butter, blend in the flour and add the milk, sherry. Cook until thickened, then simmer for 5 minutes. Add the bitters.

Meanwhile, put the potatoes in a bowl.

Cut the cream cheese into small cubes and dot the top of the potatoes. Pour the cream sauce over the top.

Bake at 350°F until cheese melts and top is browned, about 15 minutes.
