Creamed Spinach
2 (10 1/2 oz.) pkgs. Frozen chopped spinach
1/2 cup Chopped onion
2 Tbl. Margarine or butter
6 oz. Cream cheese (
1/2 tsp. Salt
1/4 tsp. Pepper
1/4 tsp. Ground nutmeg
1/3 cup Milk
Cook or microwave spinach according to package
directions until completely thawed; drain thoroughly
and set aside.
Place onion and margarin in a 1 qt. casserole.
Microwave on HIGH until onion is tender, 3-4 minutes.
Add cream cheese. Microwave on MEDIUM until softened,
1-1 1/2 minutes. Stir in salt, pepper and nutmeg until
smooth.
Blend in milk, then mix in spinach. Microwave at
MEDIUM-HIGH until heated through, 4-6 minutes, stirring
once. Stir before serving.
Makes 4-6 servings.
