Cucumber Spaghetti
Serves 2
1 cucumber
1 tbsp.good quality virgin olive oil
1 tbsp. chopped fresh dill
salt
Chop the ends off the cucumber to make it about 8” (20 cm.) long (save the ends for decoration). Peel the cucumber and cut long thin (2-3 mm) ribbons on a mandoline (or very carefully with a sharp knife).
Trim off the seeds and any remaining skin to leave only the cucumber flesh. Slice finely into long spaghetti-like lengths. Sprinkle with salt and set aside to drain in a colander.
When ready, wash the cucumber and plunge it into boiling water for a few seconds. Drain immediately and toss in hot olive oil and chopped dill.
