posted by Shannon E 07-20-98 6:06 PM Easy Fried Okra 1 lb. okra, cleaned 3/4 Cup Martha White Self-Rising Cornmeal Mix Vegetable shortening Heat shortening to about 350 degrees. Cut okra in 1/2" slices. Combine okra and cornmeal in large plastic bag. Shake to coat evenly. Remove okra from bag. In large skillet, heat 1/2" deep oil or shortening. Fry okra until crisp and golden brown. Drain on paper towels and serve hot. Serves 4.
