Robust Ratatouille Heros

6 tablespoons olive oil
1 small package mushrooms, rinsed, dried and sliced
1 large Vidalia or Texas sweet onion, diced
2 cloves garlic, minced
2 teaspoons Italian herb seasoning
1 tablespoon fresh basil, chopped
1 medium to large eggplant, with skin pared off and diced
3 cups fresh tomatoes, chopped
1 small zucchini, diced
1 green bell pepper, seeded and diced
1/2 teaspoon black pepper
4 crusty Italian or French rolls, halved
3/4 cup grated Parmesan cheese


Heat olive oil in heavy skillet over medium heat. Saute mushrooms, onions, garlic, Italian herb seasoning and basil for 5 minutes or until onion is soft. Add eggplant and tomatoes. Cook over medium-high heat for 3 minutes. Reduce heat and simmer 15 minutes.

Heat oven to 350 degrees.

Add zucchini, green pepper and black pepper to eggplant mixture. Simmer for only 10 minutes more.

Place rolls on baking sheet and toast in oven. Leave 4 halves on baking sheet and set aside other 4 halves. Top 4 halves on baking sheet with ratatouille. Sprinkle with Parmesan cheese. Return to oven for 5 minutes. Remove and top with other roll halves. Serve while warm. Great as dinner with tossed mixed green salad. Makes 4 sandwiches.
