Baba Ganush
from The Vegetarian Epicure by Anna Thomas; Sesame Eggplant

1 large eggplant
1 clove garlic, mashed
3/4 tsp. salt
3 Tbsp. sour cream
1 tsp. lemon juice
pinch cayenne


Preheat oven to 350 degrees.

Prick eggplant, put in oven for about 1 hour or until soft. Let cool and scoop out pulp.

Put pulp and all other ingredients in food processor and process until smooth. Let rest in refrigerator a few hours to blend flavors.

Serve at room temperature.
