1 stalk celery -- coarsely chopped
3 green peppers -- chopped
olive oil
3 eggplant -- cut into 3/4" cubes
2 onion -- chopped
1 pound mushroom -- chopped
1/2 cup red wine vinegar
1 tablespoon crushed red pepper
2 tablespoons sugar
salt -- to taste
1 (28 oz.) can tomato -- drained and chopped
1/2 cup green olive -- chopped
1/2 cup black olive -- chopped


Saute celery and green peppers in olive oil. Add eggplant, onions and mushrooms. Saute slightly. Add vinegar, red pepper, sugar, salt and tomatoes. Cook until eggplant is tender. Add olives. Let sit 1/2 hour. Serve warm or chilled.
