Eggplant, Tomato and Caper Salad
Serve warm or chilled from Weight Watchers
1 Large Eggplant (about 1lb) unpeeled, and diced
2 tsp. table salt
1 med. onion diced
2 med. cloves of garlic minced
1 T. sugar
2 medium ripe tomatoes seeded and diced
3 T. red wine vinegar
3 T. capers (chopped if they are large)
salt and pepper to taste
Place eggplant in colander and sprinkle with 2 tsp. salt toss and set aside for 10 min. Then rinse and drain.
Cook onions over med low heat until tender about 5 min. Add garlic, sugar, eggplant, and tomatoes, cook over med high heat until eggplant is soft (about 15 min). Cool to room temp. Stir in vinegar and capers, season to taste and serve, or chill
