Eggplant: Rataouille by Becky

Ratatouille

olive oil
2 onions, chopped fine
2 peppers, chopped fine
3 or 4 zucchini, sliced thin
1 small eggplant
4 tomatoes, peeled, seeded and chopped
1/2 c parsley, chopped
1 clove garlic, crushed
grated Parmesan cheese


Preheat to 250.

Heat oil in skillet, then saute onions until they begin to color. Add peppers and saute a few more minutes.
Add zucchini and eggplant; if necessary, add more olive oil. Cook about 5 minutes, then pour into a prepared baking dish. Add tomatoes. Cover and bake for 1 1/4 hours. Add parsley, garlic and other desired seasonings. Bake 20 additional minutes. Sprinkle generously with cheese and serve.
