Garlic Mashed Potatoes

3 heads garlic, roasted
olive oil
12 medium potatoes
4 (3") pieces of celery tops w/leaves
4 tablespoons butter
2/3 cup milk , warmed
salt to taste


To roast Garlic:
Preheat oven to 350. Cut garlic heads in half horizontally and place in small pan lined with foil. Drizzle with olive oil. Add 1 or 2 tablespoons water to keep it moist, and bake for 45 minutes or until tender.

If garlic gets too brown, cover with foil. Remove and allow to cool.

When cool, squeeze garlic onto a plate and mash with a fork.


Peel potatoes, cut into quarters. Cook with celery in boiling salted water to cover for 25 - 30 minutes or until tender. Drain water from pot, remove and discard celery, cover pot with a thick towel. Let sit for 5 minutes.

Remove towel and thoroughly mash potatoes with a masher or hand mixed. Add garlic and butter and continue to mash. Don't overbeat if you use a mixer.

Beat in warmed milk.
