Dry-Fried Green Beans

12 ounces green beans
1 dried red chile
1 cup peanut oil
1 tablespoon garlic -- chopped
1 teaspoon ginger root -- chopped
2 teaspoons dark soy sauce
1/4 cup water
1/2 teaspoon sesame oil
1 teaspoon vinegar


Seasonings:
2 teaspoons rice vinegar
1 teaspoon MSG -- optional
1/2 teaspoon salt
1 teaspoon sugar


Trim beans and cut in half. Chop the chile into small pieces. >br>
Heat peanut oil until very hot. Fry the green beans and remove after 30 seconds. Drain the oil away.

Heat 1 tablespoon oil in a pan or wok. Add the chile, garlic, and ginger. Stir for about 30 seconds.

Add the seasonings and beans to the pan and saute for a further 30 seconds.

Add soy sauce and water and simmer over low heat until almost evaporated.

Add the vinegar and sesame oil and toss to blend. Taste to see if more salt or vinegar is needed

Notes: Some places add some slivered bamboo shoot to this.
